TJ developed his love of preparing wonderful food from his Dutch father and Italian mother. Growing up in Holland, working along side with his father making award winning ice cream in their family hotel, TJ began his classical training in the finest schools and hotels of Europe. Graduate for fine pastry and Hotel School in Rotterdam, later in South Africa his master degree in Hotel Management on the University of Cape Town and Bachelor in Old and New World Wines on the University of Stellenbosch.
Back in 1988 graduated as Master Chef in The Hague. Now after 28 years of creating signature dishes and working in the finest restaurants and hotels around the world such as in The Netherlands, Ireland, Hong Kong, South Africa, Russia, in various position from executive chef, director of F&B, hotel manager and more, TJ calls Southern California home. TJ as a master chef who enjoys sharing his passion for creating and presenting a plate that makes you drool before you even taste the food.
He enjoys going beyond his guests’ expectations. Every guest served, whether the Queen of the Netherlands, former President Ronald Regan, Senator Edward Kennedy, friends, or family, is pampered and treated like Royalty.
